The best choice
Cherry, cocktail, vine and heritage tomatoes are the strongest choices for salads. They bring sweetness, colour and enough texture to stand up to salt, oil and herbs.
The salt trick
Slice tomatoes, add a little salt and leave them for 10 minutes before adding oil or dressing. The salt wakes up the flavour and pulls out enough juice to make the dressing taste more tomato-led.
Avoid
- Hard tomatoes with no smell.
- Watery tomatoes for sandwiches.
- Over-chilled tomatoes served straight from the fridge.
- Beautiful tomatoes buried under too much dressing.
