Homemade ketchup

Ketchup should be sharp, sweet, smooth and clearly tomato-led.

Ingredients

Method

  1. Cook tomato and onion until soft.
  2. Blend until smooth.
  3. Add vinegar, sugar, salt and spices.
  4. Simmer gently until thick.
  5. Taste and adjust sweetness, acidity and salt.
  6. Cool and keep chilled.

Balance it

If it tastes flat, add salt. If it tastes heavy, add vinegar. If it tastes harsh, add a little sugar. The best ketchup has all three working together.
