Ingredients
- 1 kg ripe tomatoes or passata.
- 1 small onion.
- 80 ml vinegar.
- 50 g brown sugar.
- Salt.
- Garlic, paprika, allspice, clove or chilli, depending on taste.
Method
- Cook tomato and onion until soft.
- Blend until smooth.
- Add vinegar, sugar, salt and spices.
- Simmer gently until thick.
- Taste and adjust sweetness, acidity and salt.
- Cool and keep chilled.
Balance it
If it tastes flat, add salt. If it tastes heavy, add vinegar. If it tastes harsh, add a little sugar. The best ketchup has all three working together.
