Simple tomato sauce

A reliable tomato sauce for pasta, pizza, meatballs, soup bases and batch cooking.

Method

  1. Cook the onion gently in oil until soft.
  2. Add garlic and cook for 1 minute.
  3. Add tomatoes, salt and pepper.
  4. Simmer for 20 to 30 minutes until reduced.
  5. Blend smooth or leave chunky.
  6. Taste and adjust seasoning.

Make it better

For a deeper sauce, roast fresh tomatoes first. For a brighter sauce, cook it for less time and finish with basil. For a thicker pizza-style sauce, reduce it further.

Scale up

For 20 portions, use around five times the ingredients. A wide pan helps the sauce reduce faster and taste less watery.
