Ingredients for 4 portions
- 800 g ripe tomatoes, chopped tomatoes or passata.
- 1 onion, finely chopped.
- 2 cloves garlic, chopped.
- 1 tablespoon olive oil.
- Salt and black pepper.
- Basil, oregano, chilli or a pinch of sugar, depending on taste.
Method
- Cook the onion gently in oil until soft.
- Add garlic and cook for 1 minute.
- Add tomatoes, salt and pepper.
- Simmer for 20 to 30 minutes until reduced.
- Blend smooth or leave chunky.
- Taste and adjust seasoning.
Make it better
For a deeper sauce, roast fresh tomatoes first. For a brighter sauce, cook it for less time and finish with basil. For a thicker pizza-style sauce, reduce it further.
Scale up
For 20 portions, use around five times the ingredients. A wide pan helps the sauce reduce faster and taste less watery.
